So, your kids are heading back to school next month, and you are probably transitioning (AGAIN) back to a new structure to accommodate this change. With all of the things you need to be thinking about during this stressful time, let me take one thing off your list by sharing a painless recipe that you can have cooking in your slow cooker while the kids are in school and you are at work, so you can have a delicious meal waiting for you when you arrive home. My Pulled Pork Sandwiches are the perfect end-of-summer dinner.
Get the meat prepared and in the slow cooker the night before. Whip up some coleslaw to throw in the refrigerator, and before you leave for work, all you will have to do is fill your slow cooker with water, turn it on and head out the door (or to your home office)! I promise it will be much less painless than all the forms you will be filling out when your kids get home from school! Here is what you’ll need:
INGREDIENTS:
PORK DRY RUB
- 3 Tablespoons paprika
- 1 Tablespoon garlic powder
- 1 Tablespoon dark brown sugar
- 1 Tablespoon dry ground mustard
- 3 Tablespoons coarse Himalayan salt
PORK
- 1 (7-10 pound) Boston Butt or shoulder pork roast
HOMEMADE COLESLAW
- 1 (16 ounces) bag shredded tri-color coleslaw
- 1 cup mayonnaise
- ½ cup white sugar
- 2 Tablespoons white vinegar
- Himalayan pink salt, to taste
- Pepper, freshly ground, to taste
TO SERVE
- Fresh Kaiser rolls
- Homemade coleslaw
- Barbecue sauce
