Hoppin’ John with Black Eyed Peas
Our Hoppin’ John recipe is a super-quick take on the traditional “good luck” recipe, eaten at New Year’s Eve dinner in the American South. GOYA® Black-eyed Beans and CANILLA® Extra Long Grain Rice are mixed to make a delicious dish.
Ingredients:
- 4 slices bacon, chopped
- 1 small onion, finely chopped (about 1 cup)
- ½ green bell pepper, finely chopped (about ½ cup)
- 1 stalk celery, finely chopped (about ¼ cup)
- 1can (15.5 oz.) GOYA® Black Eye Peas
- 1packet Sazón GOYA® without Annatto
- 2 cups cooked CANILLA® Extra-Long Grain Rice
- GOYA® Adobo All-Purpose Seasoning with Pepper, to taste
- GOYA® Hot Pepper Sauce, to taste
Directions
Step1: In medium, heavy saucepan over medium-high heat, add bacon. Cook until fat is rendered, and bacon is crisp, about 7 minutes. Drain off and discard all but 1 tbsp. fat. Add onions, peppers and celery to pan; cook until vegetables are tender, about 10 minutes.
Step2: Add blackeye peas (and their liquid) and sazón to saucepan; bring to boil. Reduce heat to medium low. Simmer, stirring occasionally, until thickened and heated through, about 10 minutes more. Stir in cooked rice, simmer until liquid is absorbed, about 5 minutes more. Season with adobo and hot pepper sauce.
