So here we are…it’s August. Summer is coming to an end, vacations are slowing down, students will be returning to school, and business will be resuming as usual. Before we close the book, however, I think it’s necessary to try out one of my favorite crowd-pleasing summer recipes. This one doesn’t require an oven, stove, or microwave. Heck, you don’t even need a kitchen for this one.
This broccoli salad is perfect to whip up for those Labor Day parties, as a side for your cookouts, as a satisfying quick lunch to throw in your bag for work, and it’s even easy enough for your college students to prepare in your dorm rooms.
I like to prepare the dressing first and let it sit for a few hours to let the onion flavor infuse throughout. Begin by mixing 1 cup mayonnaise, ½ cup sugar, two Tablespoons of white vinegar, and one finely chopped medium onion, in a small bowl. Refrigerate for one to two hours.
While the flavors are marinating in the dressing, cut two fresh heads of broccoli into bite-sized florets. Add them to a large bowl and toss with ½ package of real bacon bits. When ready, pour the dressing over the florets and mix thoroughly to coat all of the broccoli.
I encourage any broccoli lovers out there to try this one. The sweet and tangy dressing is the perfect complement to the crisp bite of the broccoli and the bacon just puts the flavor over the top!
